  1. Pan-fry the crumpets, in a frying pan with butter until golden (about 1-2 minutes).
  2. Top crumpet with smoked salmon, Fromager d’Affinois Bûche d’Affinois cheese and avocado. Drizzle with a little olive oil, season, and garnish with micro herbs.
  3. Serve with a wedge of lemon
