In the vibrant 1980s, in the picturesque landscapes of Pélussin, a passionate cheese-lover, Jean Claude Guilloteau, and his wife embarked on an audacious journey. Their destination? The heart of cheese-making innovation. Pélussin, nestled in the beautiful Rhône-Alpes region, provided not only a peaceful setting but also a rich environment for culinary discovery.

Pélussin, is a small village located in the Rhônes Alpes region whose largest city is Lyon, the capital of gastronomy in France. This region, in addition to bringing together 2 of the largest French mountain ranges, is also characterized by its diversity of landscapes and gastronomy. Indeed, the Rhônes Alpes region brings together major wine producers but also very great star chefs. It is in this region full of natural and gastronomic riches that Monsieur Guilloteau will settle in Pélussin; once known for its silk mills and apples.

Revolutionizing tradition

Jean Claude Guilloteau, a visionary disruptor, sought to redefine the art of cheese-making. Drawing inspiration from his background in yogurt production, he pioneered the application of ultrafiltration to cheese-making. Thus, the birth of a new era in cheese craftsmanship began, heralded by the transformation of a humble 150g double cream cheese into the illustrious Fromager d’Affinois.

Basically, ultrafiltration involves filtering milk through very fine membranes to remove excess water, while retaining nutrients and minerals. The unique savoir-faire Guilloteau doesn’t only reside in this ultrafiltration process but also on the remarkable work of our R&D team for years.
